A complex agave spirit from NOM 1607. The piñas are slow-cooked in brick ovens and crushed with a volcanic tahona stone. It's distilled in copper pots and column stills, then rested in used bourbon barrels before bottling at 40%. It starts with aromas of agave, wood, fruits, herbs, and spices. The rich and complex middle brings notes of caramel, vanilla, melon, tart green apple, lemon peel, and golden raisin. The finish is herbal with medium length, featuring oak, pepper, creme brulee, and black tea.
