An unaged Mezcal with a very mild smokiness. It's present but subtle. The spirit is light, delicate, and I couldn't detect the aromas experts might notice. It tastes more like distilled sugarcane than agave. It's very citrusy, strongly leaning towards lime and lemon. Also, some light honey. On the palate, you'll notice the light smoke, but the honey and lime are still prominent, along with a slightly herbal quality, perhaps with some mint. As an unaged, crystal clear spirit, it's well-rounded, smooth, lightly smoky, and pleasant. No harshness, mild heat, and a good finish. Not extremely flavorful, but pleasant for a sip. It might be better suited for a cocktail. Cheers!

About this bottle
Hacienda Jaral de Berrio has been producing distillate since the late 18th century, when the King of Spain granted the Marquis permission to distill on the property in what was then known as "New Spain." Today, this location in the San Felipe Torres Mochas borough of Guanajuato, a tourist destination, is part of one of the eight states within the mezcal designation of origin. The Salmiana agave species is cultivated here, harvested around 8 years of age, and processed in traditional conical stone ovens, crushed by tahona, and distilled in alembic stills. The plata version is bottled without aging.

An intense Agave Spirit made from 100% Salmiana agave using traditional methods. The Salmiana species is indigenous to central and southern Mexico. It offers a rich initial taste with notes of agave, vegetables, herbs, and spices. A vegetal middle adds notes of roasted agave, red pepper, and pine, leading to a long finish with notes of cracked black pepper and caramel. April 2017.
