Tasting notes from a distillery event in Sydney on June 8, 2022. #3 Nose: Exhibited notes of sherry, plums, overly ripe figs, vanilla, honey, cognac, and red berry coulis. The aroma was rich and heavy. Adding a little water softened it slightly but didn't alter the overall profile. Palate: Began with a strong impression of glazed fig tart covered in brandy butter. As it developed, more intense flavors emerged, such as black cherry jam, chocolate sauce, and preserved stem ginger in syrup. The ginger's heat and spice increased over time, and the texture was rich and coating. A decent amount of water reduced the intensity of the flavors. Finish: Lasted a medium duration, with spicy, chocolate-covered preserved fruits. This is a full-bodied whisky crafted with a blend of ex-bourbon, local sherry, and Spanish PX sherry casks, with a higher proportion of PX and sherry influence compared to another expression. The alcohol content is 50.6% abv. The combination results in an intense profile that can be quite spicy. However, dilution significantly improves it, releasing aromas from a distance. Aged for 4 years, double the typical time for Australian whisky. This whisky was enjoyed and was a favorite for many at the tasting, showcasing a different but equally valid aspect of the distillery's style. Rated 83/100 (3.5 stars).
