I decided to arrange my collection of 5 Sentidos mezcals, as I just acquired a new one to substitute for one that is nearly depleted. This particular one is the Sierra Negra, which requires up to 15 years to mature, and was cooked using encino oak and acacia leaves. I detect scents of grass and damp leaves, and possibly some melon. It might smell a bit like the desert after rainfall due to the acacia. The palate is mildly sweet, with some melon, parsley, and a more vegetal and peppery conclusion.
