Cinco Sentidos 'Pechuga de Mole Poblano' Single Batch Mezcal (Batch MP09-19 Distilled in January 2020, Rested in stainless steel until April 2020 / Bottle 265 of 402 at 47% ABV). This elegant 'Destilado de Agave' is made with A. Angustifolia & A. Rhodacantha cooked in an underground oven for 4 days, milled with a wood-chipper. The fibers are fermented with spring water in a rawhide fermenter, then distilled in a Filipino hybrid still. Marcelo Luna & his son Leonardo create the savory Pechuga de Mole Poblano by adding cooked chicken & a mole sauce made of chocolate, apples, bananas, chile mulato, chile ancho, cinnamon, cumin & sesame seeds to the 1st distillate before the 2nd run. It has an aromatic opening with notes of BBQ meat, citrus, tropical fruits, vegetables, dried herbs & baking spices. The complex mid-palate features notes of tomato soup, Mesquite BBQ chicken wings, pechuga, roasted poblano pepper, mustard, cinnamon, allspice, mint & dark chocolate. It finishes with a balanced medium length featuring notes of agave, banana, sourdough, ginger, leather & smoke. October 2021
