Waterford Dunmore Edition 1.1

The aroma isn't typical for an Irish spirit; I detect some salt and citrus, possibly a hint of grass. The taste offers more traditional notes and strongly reminds me of Green Spot, particularly a green apple note on the finish. Upfront on the palate, however, there's a slight sourness that fades as the sweet apple emerges. It's difficult to articulate, but it most closely resembles that salty aroma and brings to mind sourdough bread or grains. It's very intriguing, but probably not something I would purchase again.

The aroma is herbaceous, reminiscent of dried hay, with underlying dark notes of sun-aged oak. It starts directly on the palate with a crisp oak cask sensation and well-balanced malted barley. The mid-palate exhibits many piercing high notes, with the wood becoming dominant after a short period. It has a medium-light body and a lengthy finish that subtly resolves with a fresh apple taste. A delightful spirit requiring multiple sips to fully appreciate its subtle complexity.

This is a very smooth 100 proof spirit, possibly smoother than many 80 proof whiskies. It's very easy to drink neat or with just a tiny bit of water. It has most of the flavors expected in Irish whiskey, but it's brighter than most, with added citrus notes. It's a bit pricey for a regular pour but makes a very nice treat for a special occasion. A friend gave this to me as a retirement present.

The aroma has a slightly waxy quality, but the main characteristic is a consistent and prominent buttery note, which nicely balances the earthier and fruitier elements. The palate is a bit rougher and maltier, yet retains that buttery sensation, tasting sweeter here, like buttercream frosting. The finish is gentle, sweet, and subtle, fading out with sweetness.

Cherry, a strong aroma, and vanilla. The aroma is really nice. The flavor is a bit different, with some spice/smoke tones and chocolate. It's very flavorful and light.
