About this bottle
The foundation spirit is crafted from organic wheat, barley, and rye, which undergo an extended fermentation. Following column distillation, it is aged for two years in new air-dried oak. Subsequently, organic botanicals—juniper, coriander, cardamom, cassia bark, and orange and lemon peels—are macerated with the spirit for 24 hours. It is then re-distilled in copper pot-stills with lavender, chamomile, and elderflower contained in baskets. After stabilization and aeration, the gin is bottled at 57.1% ABV and is not chill-filtered.
