About this bottle
Sombra Ensamble Mezcal is produced from 100% agave, specifically wild tepeztate and tobalá, harvested responsibly in the Oaxacan Sierra in 2017. The agaves were cooked over hot stones and a wood fire, then crushed using a limestone wheel. Fermentation utilized wild native yeast, followed by double distillation in copper stills. Only 2000 bottles were produced, and it became available in the US in April 2019 at 51.6% ABV.
