About this bottle

Though carrots are botanically vegetables, this eau-de-vie embodies the character of unaged fruit brandies. A local farmer, unable to sell imperfect carrots, provided them to Hans Reisetbauer, who ingeniously transformed them. Due to carrots' lower sugar content compared to fruit, 90 pounds are required to produce one liter of alcohol.

A subtle, mildly carrot Eau de Vie from Axberg, Austria. It begins cleanly, almost like Tequila, with herbal and roasted walnut notes. Its complex development introduces glazed carrot, hops, and creamy hazelnut elements, leading to a long, dry conclusion with a damp earthy note. March / June 2018
