About this bottle

Jean-Luc and Marie-Françoise Pasquet cultivated their 7-hectare estate conventionally until they transitioned to organic winemaking in 1995, achieving "Agriculture Biologique" certification in 1998. Their Coeur de Grande Champagne, meaning "heart," does not display an age statement or a VS designation but is intended as an introductory bottling aged between 5 and 10 years in Limousin oak.

I sampled Pasquet's XO following some positive feedback - anything aged for 25 years ought to be decent, right? While it has the anticipated flavors of dried fruit and an unidentifiable spice on the palate, the aroma and taste still carry a potent alcoholic burn, which is disappointing for a 25-year-old cognac.
