Old Elk 10 year Straight Wheat Whiskey (old label)

First pour from a newly opened bottle. Nose: Vanilla & Toffee/Caramel. Quite sweet. I also detect some baking spice (I believe more cardamom or nutmeg). I didn't find much fruitiness in the aroma. Palate: For me, this was quite hot in the mouth, especially considering the proof. It's very thick and creamy, coating the mouth. Baking spice appeared first, followed by a bright and very brief burst of fruitiness. The fruitiness then subsided into just a very soft/round, nondescript fruitiness (baked apple or stone fruit, perhaps?). There's definitely some spearmint, similar to the spiciness of putting chewing gum in your mouth. Some slight biscuity yeastiness is also present. Finish: A bit hot and warming. It lingers for a while. More baking spice is present. It remains sweet throughout. When the glencairn was nearly empty, I detected a brief whiff of mustiness/leather in the aroma. Quite enjoyable, and I got a great deal on the bottle.

Nose: Green apple, spicy cinnamon oak, bright fruity sweetness, cherry. Taste: Very light and sweet at first, with the oak intensifying in the middle. Very peppery and heavily cinnamon-flavored towards the end. Finish: A light but lingering finish of spicy black pepper.

Wheat is clearly prominent. Warm baking spices and honey when consumed neat. A small amount of ice reveals fantastic light molasses and maple notes with a hint of oak.

Spicy and hot on the initial and middle tastes, followed by a heated finish. The heat makes the flavors seem subdued.
