This is an off-dry, Cask Strength Brandy from Nicolas Palazzi, produced for the DYC Distillery in La Pardina, Spain. It is made from 100% Eau de Vie of the Spanish Pardina grape, distilled in a copper pot still, aged for 7 years in a first-fill ex-Amontillado cask, and bottled at 42.5% ABV. It opens with herbal, rancio, and plum notes, leading to a long, tangy finish with hints of nuts, tea, seaweed, and apricot. Sampled in December 2019.
