Not ideal for sipping straight, but remarkably intriguing. It's heavily influenced by vanilla, yet the flavors offer surprising floral spice. The aroma is rich with vanilla and barrel-aged caramel, though it doesn't hint at the spice. The finish is lengthy with a spicy, woody character. Made with a single distillery pot still.

About this bottle
Whereas most Bajan rums are a skillful combination of pot and column distillation, Mount Gilboa is unique as it is exclusively pot-stilled. It is produced by the same distiller and at the same facility that creates rums for Mount Gay. Unlike in the vodka industry, triple distillation significantly impacts this spirit, involving three separate passes through the distillery's double-retort pot still. Production runs for this rum were limited, and distribution was restricted, making it a rare find when available for purchase.
