An intense agave from NOM-O20X in Matatlan, Mexico, known as the "World Capital of Mezcal". It's made with Espadin agave and double distilled. It begins aromatically with agave, herbs, and spices. The middle has notes of candied agave, leading to a balanced, medium-length finish with earth, pepper, and a touch of smoke. April 2017

An intense Agave Spirit from NOM-O356X, made with 100% Espadin Agave, cooked in an earthen pit and twice distilled in a copper pot still by maestro Petonilo Rosario Altamirano from Las Margaritas, Oaxaca. It presents an aromatic beginning with agave and smoke notes; a metallic middle adds copper notes; leading to a long and complex finish. April 2017
