The nose is distinctly grassy with pear essence, sweet and floral, lacking any ethanol notes. Pear and ethanol are prominent on the palate initially. Underlying flavors include mineral, green apple, a hint of anise, and musty earthiness, with a touch of bitterness. It has a bracing quality. The finish is quite long, featuring a bitter-sweet profile, earthy notes, white pepper, and a sharp sensation, with anise and sourness lingering for over a minute. It's important to remember this is an Eau de Vie, not a sweetened pear liqueur. When tasted chilled, the flavor profile remained similar, though the earthiness and anise diminished, becoming more mineral-forward. I plan to experiment with its use in cocktails.
