Aroma: It's aromatic and peppery. Notes of citronella, cloves, vanilla, and beer are present. Adding tonic enhances the aroma, unifying it into a delicate spicy-floral scent. Taste: Sweet upon entry, but not excessively so. It has gentle spice and herbal notes. The mouthfeel is smooth, with pine and citrus flavors, leaning slightly towards astringency. Aftertaste: Lingering for a moderate duration. It's bittersweet and herbal, finishing with a woody taste. Barrel-aged gin requires some getting used to, and its success in any specific bottle hinges on the synergy between the gin's character and the cask's prior contents, as well as the level of wood and tannin absorbed by the spirit. This expression is among the superior ones I've sampled, offering a smoother, gentler profile than certain others. It pairs well with tonic and ice, though the taste does develop a slight bitterness. This can be counteracted by adding an orange slice, which complements it nicely. This is a product from Kangaroo Island Spirits, a gin maker founded in 2007 at Cygnet River on Kangaroo Island, located off the coast of South Australia near Adelaide. It was the inaugural craft distillery in South Australia. The casks are former Australian whisky barrels, reportedly acquired from a specific distillery in Tasmania. This is plausible given that the owner and head distiller at this establishment is the brother of a notable figure in Tasmanian whisky production. Rating: Above Average, 82/100 (3.25 stars)
