About this bottle
This mezcal is made using agave grown and harvested sustainably through the company's Grower Support Program. Kimo Sabe, meaning "trusted friend," employs a mix of modern and traditional methods: agave is steam-cooked in ovens and milled, alongside agave roasted in open pits and crushed with tahonas. These separate batches are fermented individually, blended, and then distilled three times in a pot-still. The joven is bottled unaged at 43% ABV.

Chocolatey earthy notes, minerals, clay, slightly smoky on the finish. Sweet melon and vanilla. A nice sipping mezcal.
In my opinion, this is their top Mezcal. It's not as intense as I'd prefer, but it's excellent in cocktails!
This is my new favorite for making margaritas. It adds a flavor dimension that tequila doesn't possess.
