Hinch Single Pot Still

A complex Single Pot Still Irish Whiskey crafted by Terry Cross, the founder of Hinch Distillery in Ballynahinch, Northern Ireland. It's made from a blend of malted and unmalted barley, with 3% to 5% oats added to the mash bill. The majority is matured in bourbon casks, although a small portion spent time in sherry casks. It presents an aromatic beginning with notes of porridge and cream, complemented by lime zest, cinnamon, and melted butter; its creamy character adds flavors of warm oatmeal raisin cookies, lemon curd shortbread biscuits, and mint; leading to a long and dry conclusion with hints of peppery oak, citrus zest, sherry, rancio, and a touch of spice. It's easy to drink, with no off notes, but the palate lacks depth. For a single pot still, I expected a more substantial flavor. While I'm certainly enjoying it, considering the price and how it stacks up against competitors in terms of cost and flavor complexity, it's not outstanding.
