Samuel Gelston's Single Pot Pinot Noir cask

Irish whiskey isn't my usual preference, but I'd never tried a pot still spirit before, so I decided to sample this one. I can honestly say I enjoyed the entire bottle over several weeks. This might be the first Irish whiskey that truly satisfied me. Its light color makes it appear almost like water in a dark glass. The aroma is similarly light and subtle, with faint notes of mangosteen, almond, and white chocolate. Contrary to the scent, it explodes with flavor the moment it touches the tongue. It's smooth and sweet, reminiscent of acacia honey, clarified butter, cane sugar, and a hint of elk wood. The flavors are delightful, predominantly sweet. The finish is almost devoid of burn, leaving a trace of wood and earth. I believe there are more complexities to uncover, prompting me to revise my tasting notes with each serving. The taste shifts depending on what I've eaten earlier in the day. I will definitely purchase it again. A wonderful dram!
