A rich Agave Spirit from El Cristiano / NOM1499 in Jalisco (Los Altos), Mexico. It's crafted with agave cooked in an autoclave, fermented in stainless steel, then double distilled in a stainless pot with a copper coil. It's aged for 11 months in ex-bourbon American & ex-red wine French oak barrels before being blended and bottled at 40% ABV. It has an aromatic start with notes of cooked agave, fruit, wood, flowers, herbs & spices. The rich mid-palate adds notes of candied agave, caramel, vanilla & grilled pepper, leading to a peppery, medium-length finish with a hint of oak & anise. February 2023
