Despite the claim of 25 years in the barrel, the sharpness of a young cognac's alcohol is still present and nearly overwhelming. However, there is a delightful initial taste of dried fruits and smoke, followed by a beautiful, lingering sweet vanilla finish that persists for some time.

About this bottle
Paul Giraud Cognacs originate solely from the Grande Champagne region and are never created by blending spirits from different years. Their cognac is made from estate-grown ugni blanc, folle blanche, and colombard grapes. While the minimum aging requirement for an XO designation is now 10 years (previously six until 2018), this bottling significantly surpasses that standard, having been aged for 25 years in barrels with a medium toast, 33% of which are new.

I find this appealing. Borrowing an idea from another user, it smells and tastes like fermented fallen apples. I sampled it with a friend.
