Appearance: A vibrant, opaque yellow. Aroma: A strong scent of lemon zest, with an oily rather than fruity quality. Flavor and Texture: Thick and sweet with a pronounced lemon character. The texture is oily, leading to an intrusive bitterness in the finish. The presence of fruit pith is discernible. Cello is a relatively new company from Sydney, established about a decade ago, but they've only recently gained significant attention. They focus on a variety of fruit "cellos" (lemon, orange, lime, etc.) as well as a sweeter, thicker, dairy-based range called "dolce" (chocolate, coffee, coconut, and various fruit flavors). This is an acceptable limoncello, better than some I've had, but it's far from the best. Limoncello is simple to make (I often make it myself), but achieving the right balance is tricky, and they've missed the mark slightly here. A good limoncello should be both sweet and sour, fruity and oily, but not overly bitter. A common issue with commercial versions, even some of the top ones, is excessive bitterness caused by leaving white pith attached to the peel, which is clearly noticeable here.
