This additive-free tequila, made from 100% estate-grown agave in Michoacán, is produced using a stone oven and autoclave for cooking, and a diffuser and roller mill for crushing and extraction. It features open-air fermentation with natural yeasts in stainless steel tanks without fibers. The spirit is distilled twice in stainless steel tanks with a copper coil, then aerated and rested in American oak before undergoing carbon filtration and bottling at 80 proof.

The nose is ethanol and oak, leading to a surprisingly sweet and mild palate. The first sip has apple and banana, followed by agave, clove, and a toffee finish. A genuine find given the affordable price.
