About this bottle

Bayou Select Rum is produced in Lacassine, LA, starting with sugarcane grown in Louisiana. The spirit undergoes a double distillation in copper pot-stills. It is subsequently matured in former bourbon barrels for a period of up to three years. The Bayou brand also offers Satsuma, Spiced, and Silver rum varieties.

Annemarie Ellington 4.0

The aroma suggests apple pie (apples, vanilla, a hint of cinnamon) with faint undertones of caramel, orange spice, and a little butterscotch. The flavor is somewhat tropical and spicy. It's a bit rough initially but smooths out with ice. I really enjoy it with coke and lime, and it makes a fantastic daiquiri. However, it seems intended as a sipper and might still need a few years to reach that potential.

It almost has notes of freshly fried beignets. Excellent spice notes throughout. Easy to incorporate into creative tiki drinks.
