Alligator Bay Sun Gold Rum

The nose is unusual, sweet, and slightly sharp, with notes of artichokes, honey, dried lemongrass, and a hint of golden syrup, almost musty. The palate is very sweet and peppery, with abundant honey upfront followed quickly by cayenne and a touch of cinnamon. Beyond this sweet heat, there isn't much complexity, but it's enjoyable. The mouthfeel is average, slightly thin yet coating. No complaints here. The finish is pleasant, sweet without being cloying, with hints of sugarcane and Honey Nut Cheerios.
