Crafted from organic, locally sourced soft red winter wheat, this whiskey carries no age designation. It features eight distinct oak combinations and char levels. To emphasize the importance of oak in its creation, a single toasted oak chip is included within the bottle.

Initial aromas are of toasted sugars and spirits, then the sweet char fades to an earthy scent reminiscent of clay. The palate follows with more toasted sugar, akin to a cremated marshmallow. Towards the finish, a hint of chocolate emerges with added water. My tasting friends called this spirit "a campfire treat in a bottle." It is an intriguing, though not especially delicious, whiskey.
Though I try to support regional distillers, I really wanted to enjoy this. Wood chips were added to the spirit to accelerate aging, a method that some other local distilleries, like Defiant Single Malt, do very well. Unfortunately, it was quite rough and tasted like a brown paper bag. I'm hoping I can blend it, or else I'll have a $30 bottle of mouthwash. This is the worst whiskey bottle I've ever bought.
Upon removing the cork, a strong yeast smell hit me. It was off-putting. The initial taste was harsh, almost like chemicals. The yeast aroma overwhelmed any enjoyable aspect of the flavor. It doesn't justify a $30 price tag, and honestly, I believe it belongs on the lowest shelf. I'm let down because I appreciate the use of locally sourced grains. I've had many bottles under $20 that went down more easily.
The intense heat from this bottle was overwhelming. I've never experienced heartburn from a whiskey like this. I suspect a potential issue with the cork, as it repeatedly came loose after the initial loosening. I'll attribute this to a unique bottle defect, though it's disappointing. I admire the TOPO brewery and hope to enjoy the distillery's products as well.
This is not technically a wheat whiskey because it was aged with chips. It gives off notes of oak, vanilla, and pepper. The taste is sweet, with hints of vanilla and a woody, non-tannic finish. It has a full mouthfeel. I'm not sure what some others on this page tasted, but this is a great value for the cost.
