A refined Agave Spirit from the Los Altos region of Jalisco, Mexico, made with Weber Azul Agave. It's cooked in stone/brick ovens, fermented in stainless steel tanks, and double distilled in a Stainless Pot Still with a Copper Coil. It was aged for 5 years in former Jim Beam Bourbon Whiskey barrels, and 2% Agave nectar was added before bottling at 35% ABV. It begins delicately with flavors of cooked agave, citrus, red fruit, wood, and herbs & spices. During its smooth journey, notes of lemon, cherry, and cider emerge, leading to a brief and balanced conclusion with hints of Agave nectar, black pepper, oak, creamy caramel, and sweet chocolate.
