Square 6 High Rye Bourbon is the inaugural bottled bourbon produced at the distillery situated within the Evan Williams Bourbon Experience in downtown Louisville, Kentucky. The name Square 6 references the original land parcel where Evan Williams established Kentucky's first commercial distillery in 1783, located on the same city block as the Evan Williams Bourbon Experience's opening in 2013. This marks the first product to emerge from this facility, which operates under Artisanal Distiller Jodie Filiatreau and produces one barrel daily. The bourbon features a mash bill of 52% corn, 35% rye, and 13% malted barley, has been aged for 5 years in new, charred American oak, and is bottled at 95 proof.

AROMA Oak, toasted corn, yeasty, biscuity, minerality, and some candy sweetness. It evokes a bakery, like fresh bread dough. Peculiar. TASTE Woody, orange candy, toasted grain, raw bread dough, caramel syrup, baking spice, and a slight grassy note. Strange... very strange. That doughy character persists here, reminding me of childhood baking sessions. FINISH Medium-short -> Doughy, woody, cough syrup, and grassy grain notes.

I sampled this at the Evan Williams Experience gift shop. Honestly, I'm surprised it's five years old. It presents as much younger, with an initial ethanol hit and heat for its proof. Very dry, with virtually no finish. The flavors present do suggest the high rye content. It might have been significantly better if it had aged in the barrel a few more years?

A favorite. A friend bought it for me at his bachelor party, and we enjoyed it all weekend at his wedding. The mashbill of 52% corn, 35% rye, and 13% barley is fantastic. This time, the barley was much more prominent, smoothing things out and giving it a wonderful mouthfeel that transitions into a slow caramel and rye peppercorn spice.
