A rich Mezcal produced by the father-daughter duo of Jim and Ashley Walsh, NOM-O286X, sourced from Oaxaca & Zacatecas, Mexico. They aimed to create the sweetest and most flavorful Mezcal using unconventional techniques: firstly, they distill it three times (twice in steel and once in copper stills); then, they employ high-tech sound wave technology to unify the Spirit's molecules. It is subsequently aged for 18 months in American oak casks that had previously been seasoned during the aging of Kimo Sabe Reposado. Kimo Sabe utilizes both steamed and fire-pit roasted agave. It is challenging to determine the specific agaves used in Kimo Sabe as the brand incorporates multiple agave types in its blend. It begins aromatically with notes of tropical fruits, nuts, and baking spices; its rich and spicy body introduces notes of almond, vanilla, oak, chocolate, lemon peel, orange peel, chamomile, banana, agave, sarsaparilla, and licorice; culminating in a spicy finish of medium duration with notes of butter crème, chipotle, roasted black pepper, and cayenne.
