A slightly sweet, unfiltered Junmai Ginjo Sake from SakeOne Brewery in Oregon, made with Japanese techniques using local rice milled to 60%, water, and handmade koji. It starts with subtle grain and hints of tropical fruit, nuts, and spice. The middle develops with rich notes of rice, coconut, pineapple, banana, and vanilla, leading to a creamy, medium-length finish. January 2022
