Redwood Empire Grizzly Beast Bottled in Bond Bourbon (Batch 2)

It’s quite viscous, with slow-moving legs that cling to the glass, forming a distinct sheet. The color is a bright golden brass. Nose: Caramel, toasted notes, a very clear fruity character, or perhaps herbal, or something else entirely. It’s genuinely intriguing. On the palate, it’s soft and quickly becomes warming, with the heat steadily increasing. It begins sweet, but only briefly. The entire experience is well-balanced, maintaining a profile of very ripe stone fruit, specifically prunes more than cherries. A subtle chocolate note is integrated into the lengthy finish, alongside suggestions of s'mores or dark chocolate malted milk balls. This offering is complex, captivating, well-balanced, and delicious. It’s rich in character without being understated... This is exceptional. It diverges significantly from a traditional Kentucky bourbon, which is not a drawback.

The aroma is cherry and sweet, with little else detected. The taste presents with oak upfront, followed by a pleasing rich fruitiness. With subsequent sips, the caramel from the corn emerges, bright and pronounced. The texture is very satisfying, coating the mouth well. A very subtle sour note is present in the finish. The finish is shorter than anticipated but enjoyable and noticeable. Overall, this is a superb drink. I've savored it before and it's certainly a bottle that resonates with my preferences. Discovering it during one of my journeys was a fortunate outcome and I'm pleased with the selection.

I had been wanting to find this bottle for quite some time. I located it in Colorado and, as someone who enjoys BiB bourbons and Redwood Empire, my expectations were high. The aroma features savory sawdust and vanilla, which is right up my alley, along with notes of summer peach and pear. The summer fruit notes continue on the palate, accompanied by caramel, cherry frosting, oak, and a subtle hint of pepper. The finish has a savory spearmint character. I still feel like I'm discovering its nuances, which is precisely what draws me back to the Redwood bottles.

Very sweet aroma, with prominent vanilla and some caramel. Or like sweet cotton candy. Sweet on the palate too, with a touch of oak. It hits initially then finishes very smoothly with decent viscosity. The sweetness lingers pleasantly. A very good Bottled-in-Bond.

The aroma is excellent and everything comes through on the palate. It starts with a bit of maple syrup, then a cinnamon red hot finish. Quite good and full of flavor for a Bottled-in-Bond. This was actually batch 3, but it wasn't an option to rate.

Sugar, canned pear, and dried fruit – almost like fruitcake but less malty. Cracked pepper opens up the heat.
