About this bottle

Harvested from WhistlePig Farm in Vermont, this single barrel straight bourbon features a high rye mash bill of 51% Dent corn and 49% Remington and Rifle rye varietals grown in fields ‘North Orwell 1’ and ‘North Orwell 2’. The spirit was produced on WhistlePig’s original hybrid still, ‘Mortimer’, finished with water from the farm’s well, and matured for over four years in Vermont Estate Oak barrels. It is presented at 100.1 proof, exceeding the bonded whiskey standard by a small margin. Only 16 barrels were made available in 2021 as of June.

The aroma offers fresh grass, hay, a hint of honey, and a pleasant oak presence right away. The flavor profile mirrors the nose, but the youthful characteristics are less pronounced than expected. The texture is quite watery and has an unwelcome sharp spice. The conclusion is brief to moderate in length, and unfortunately, the flavor lingers longer than desired. It's much too immature, especially given Vermont's weather, and that's quite evident.

In my opinion, this is the least appealing bourbon I've encountered in a decade of whiskey collecting and enjoyment. The aroma consists of corn and earth, while the taste is dominated by soil and oak. The conclusion carries notes of straw and freshly cut grass, lasting for hours. I was unable to finish a two-ounce serving.
