Subtle coconut and sugar. Nose after letting it sit for 10 minutes. Subdued aroma with initial notes of coconut and vanilla. Some brown sugar and sugarcane with a very faint caramel and a hint of cinnamon, baking spices, and pineapple. The flavor is definitely more pronounced than the aroma upon tasting. The taste starts with caramel, some saltiness, and coconut, along with some ethanol heat but noticeably lacking the harshness of young alcohol, presenting a clean burn instead. The flavors continue with notes of brown sugar and molasses before concluding with a moderately short finish of spice and sugar.

About this bottle
For their Amber rum, Privateer utilizes a blend of grade "A" molasses and genuine boiled brown sugar, which is simmered pressed cane juice. A proprietary yeast, chosen specifically for this rum, is also used. The mixture undergoes a lengthy six-day fermentation and is distilled twice. Initially, a pot-still is used, followed by a still equipped with plates for the second distillation. The final distillate is assessed for flavor and then selected for aging in either new American oak barrels or used bourbon or brandy barrels. After maturing, the rum is combined and aged further for four to eight months in barrels that have been used three or four times. Soft water is introduced gradually throughout the process and at bottling, the rum registers 90 proof. It undergoes gentle filtration with no additives, including sugar.

Excellent for sipping. Potent flavor without intense burn. In my inexperienced opinion, it's quite similar to whiskey or bourbon. It's clear that no artificial sweeteners or flavors were added.
