The nose is a vibrant mix of tropical fruits, including overripe banana, ripe mango, papaya, pineapple, and the sweet syrup from canned fruit cocktail, with touches of vanilla and a scent like lemon-scented furniture polish. The texture is heavy and thick. On the palate, I taste caramelized plantain, mango, lightly salted banana chips, dried durian, pineapple juice, and faint notes of almond butter and cigar ash. The finish is long and intense, with more of the tropical fruit cocktail and a hint of truffles, plus fainter, thankfully brief hints of acetone and furniture varnish. This wouldn't be an everyday drink for me, but it's very good and very potent.

Paranubes Rum is produced from fresh sugarcane juice harvested near the Sierra Mazateca Mountains in northern Oaxaca. Master distiller Jose Luis Carrera utilizes four distinct sugarcane varieties, with Caña Criolla being the primary type. Uniquely, Paranubes employs a continuous wild fermentation process, with the entire batch only being drained every four months. The fermentation typically lasts 24-48 hours, with half of the contents removed daily for distillation in a wood-fire copper column still. Bottled at 54% ABV, no water is added to reach the final proof; instead, rum of differing proofs is blended.

Wow. It fills the surrounding air with intense olive brine aromas. The intensity of the scent here is incredible. The palate is equally thrilling, with an earthy character that nearly brings mushroom to mind. It's one of the most distinctive rums I've encountered, but it's likely not suited for everyone.
Sweetness is present, along with an oily, fruity funkiness. The finish isn't as long as I would prefer.
Remarkably distinctive. Smells like Cachaca. Savory, rich, and dry. Many notes.
