It tastes quite young with a strong alcohol aroma. The palate is slightly sweet with a touch of maple. It brings to mind a white rum and works well in those kinds of drinks, or with just a bit of maple syrup added neat. As someone who makes maple syrup as a hobby, I've always been curious about the taste of a spirit made entirely from maple sap. I'm pleasantly surprised. I truly hope they are aging some of it, as I'd love to sample it after a few years in a barrel.
