This is my second experience with mezcal. A new sensation! I sampled it neat in a snifter. Regarding the aroma, I perceive black pepper, green pepper, agave, a subtle citrus note, celery salt, and ethanol. On the palate, I'm tasting banana peels, smoke, intricate herbal notes, some sweetness, and an almost savory finish. It has a rich quality, though not as smoky as the Ray Campero Espadin, and lacks the iodine and mineral traces found in that spirit. The finish is brief, fading cleanly and leaving a sweet aftertaste with just a hint of smoke. Any ratings I give for mezcal should be considered with the understanding that I have limited experience with it. This particular one is quite intriguing, but not entirely to my preference. I'm curious to try it in various mixed drinks. It's complex and flavorful. I believe it would pair well with a spicy meal or even some smoky barbecue.

About this bottle
Alipús is a cooperative of mezcal producers located throughout Oaxaca, dedicated to creating a spirit with "heart." With assistance from Los Danzantes, they collaborate to produce a collection of single-village mezcals, each reflecting the unique terroir and traditions of its mezcalero and village. The San Balthazar expression is distinguished by its fermentation in pine vats using wild yeast, overseen by Mezcalero Don Cosme Hernandez. This mezcal, made from espadín agave grown at an altitude of 5,700 feet in very rocky soil, is characterized as a "high elevation" spirit.

An elegant, Young Mezcal from Déstileria Los Danzantes NOM-O14X in Oaxaca, Mexico. Mezcaleros Don Cosme Hernandez, his wife Cristina & his son Cirilio gather wild maguey Espadin agave from the surrounding mountains & craft each batch by hand using wood roasting, stone-ground pulp, traditional pine fermentation vats, & a small copper still for double distillation of the Spirit. It offers an aromatic beginning with notes of earthy minerality, smoke, citrus zest, guava, cilantro & tropical florals; its rich & spicy character introduces notes of citrus with parsley, sage & a hint of ripe banana; concluding with a brief, crisp & herbal finish with a touch of earth & agave. Nose - agave, spice Palate - rubbery sweetness, fruits Finish - spicy, medium, enjoyable Overall - the spice and the rubbery taste (I assume that's the ripe banana) are distinctive; it's an interesting one to drink. Would be suitable for a party drink.
The nose has smoky, earthy, slightly vegetal, and woody characteristics. The taste is less sweet, with more emphasis on wood and smoke, and a mild heat.
I tried this at MesoMaya. It was sweet, mild, and fruity. Fantastic in that strawberry serrano margarita!
The aroma is very vivid, carrying a lemon fragrance. It lacks excessive smokiness and is rather mellow.
