Gideon Stock 3.0

Nose: Prominent cheese notes - aged gouda with swiss. Faint lime and brine are present, with underlying bitter mint. Palate: Sweeter than anticipated, yet the strong cheese flavor persists. Abundant prickly spice, particularly towards the end. This is not a sweet tequila. I detect a hint of lime and certainly some mint (spearmint). At times, it resembles a green tree branch (still on the tree). A touch of burnt grass. Quite viscous and full-bodied. Finish: Lingering cheese on the finish. Occasional mint. A somewhat vegetal undertone. Faint burnt grass. Conclusion: Should tequila taste like cheese? I've noticed hints of this before, but this one really commits. If this is an appropriate flavor profile, they've executed it well. I've just never encountered it, so I'm unsure of my opinion. Considering this a reasonable flavor, but not particularly enjoying it, I'd place it between 11 and 16. I think a 14 is possible, but I'm contemplating a 15. It's more bold and interesting than another brand. I'll settle on 14.
