Honeoye Falls La Cascade Verte Absinthe Supérieure

This is an absinthe that I distilled. La Cascade Verte, the companion absinthe to La Cascade Rouge, is a classic style absinthe made with wormwood, anise, and fennel during distillation, and colored with hyssop, lemon balm, spearmint, and petite wormwood. The bottle's alcohol content is an impressive 70% abv, designed for traditional absinthe service and to hold its own in cocktails using the spirit. The aroma has a dominant anise and spearmint character, with a light opalescent sheen when diluted almost five parts to one. The taste is herbal, sweet, minty, and bitter. It holds up well with or without sugar.
