Hillrock Estate Single Malt

I generally don't care for peat flavor. To its credit, this isn't overwhelmingly peaty. Interestingly, they mature the single malt in their own previously used bourbon barrels from the "nursery" batch that replenishes the solera system. It's finished for two weeks in oloroso casks, then two weeks in Pedro Ximénez casks, and they malt their own barley grown on the estate.

I adore this color! I actually purchased it because of its color, but kept it for the flavor. It's reminiscent of bourbon (is that a word?), with a kick of rye. If you like bourbon and rye, this is for you. It's not really comparable to Scottish single malts or blends at all. Worth sampling, but it's pricey; you can find better value elsewhere.

I regret spending a hundred dollars on this after reading user reviews. From the aroma to the finish, it's all smoke and leather. It's not to my liking. I can't comprehend how anyone can discern anything other than smoke, as that's its sole characteristic. I'm disappointed in myself for not doing adequate research.

The color is dark caramel and amber. It has notes of corn, black pepper, and apple, but the most prominent aroma is sweet toffee. There's a warm sweetness on the palate reminiscent of buttery popcorn and crisp apples with a smoky finish.

The whiskey was visually appealing in its bottle, featuring sharp edges and a thick glass base. The flavor profile was intricate, ranging from sweet to peppery. My mouth and nose retained a pleasant smoky and peppery sensation long after my glass was empty.

Impressive. The nose is sweet and rich, with notes of caramel and cinnamon. The flavors echo the aroma, adding hints of leather, vanilla, and dark cherries. It goes down smoothly with a slight bite at the end. Served with one small ice cube.
