About this bottle

Harvest Spirits, holding New York's first farm-distillery license, operates on a 200-acre apple farm in the Upper Hudson Valley. Their single malt is crafted from 2-row malted barley, rested in new oak, and subsequently aged for two years in the distillery's own Applejack barrels.

Heath Salazar 3.0

The aroma is lively with ripe fruit, straw, barley, fresh oak, and the faintest hints of sweet pipe tobacco and honey. The palate is gentle, filling the mouth with barley, white pepper, and fruit sweetness. There's a slight graininess that suggests its youth, but it's not unpleasant and actually enhances the flavor as it mingles with a touch of vanilla that emerges near the end. The finish is medium, featuring a lingering pepperiness and a bit of chewiness from the barley as a certain graininess fades. The nose's bouquet makes one want to squeak like a bottlenose dolphin after a satisfying meal at Red Lobster.

Not my top choice. I detect a faint hint of nuts and vanilla, but I don't get apple, apricot, or pepper. Nevertheless, it's pleasantly smooth on the palate.

Savoring this by the fire, it was oily and a bit smoky with a smooth finish. I was trying to identify finishing flavors that never materialized.
