This establishment in New York also produces beer and wine under the Mazza Chautauqua Cellars brand, in addition to various spirits and cordials like limoncello and eau de vie. The second batch of their rye whiskey undergoes an 18-month aging period in small, charred American oak barrels. The mash bill consists of 80% rye cultivated in New York and 20% malt.
