Dry Hills Bin 7 Wheat Whiskey

Visited the distillery and was given this spirit after a mixed drink. It was served cloudy and unfiltered, which was nice! Nose: Evokes a young, green malt, despite the 80% wheat content. There's also a surprising hint of rye spice. Notes of dark wildflower honey and caramel syrup, followed by vanilla toffee. It then becomes intensely like butterscotch syrup. Palate: Very sweet, with a pleasant spiciness towards the end. A touch of smokiness, like burnt toffee, which is appealing. Hints of sawdust and grain. A little vegetal quality, reminiscent of grass and some herbal notes. Finish: Of medium length and moderate. The sweetness fades first, leaving behind black pepper and sawdust. It suggests aged corn, though corn isn't in the grain bill! Overall: For a newly produced local spirit, this is quite impressive. It is undeniably young and a tad too sweet for my preference, but I find it enjoyable.

Aroma: Pleasant sweetness without being overwhelming. Smells harsher than the actual spirit. Significant alcohol scent. Palate: A thick, somewhat slick texture. Initial sweetness with notes of vanilla and caramel, transitioning to a warming sensation at the back of the throat. Not spicy. Aftertaste: A lingering earthiness remains, the prominent barley flavor gives way to rye. Causes puckering on the back of the tongue, yet feels smooth on the front.
