Monte Sachs, the owner and distiller, operates Catskill Distilling Company in Bethel, New York, near the location of the 1969 Woodstock festival. The distillery utilizes water sourced from the Catskill Mountains and grains cultivated locally. Catskill Whiskey Company crafts its spirits in small batches. The Fearless Wheat Whiskey is bottled at 42.5% ABV.

Appearance: I was captivated by the sight of this wheat whiskey in my glass. Its deep brown, football-leather hue was striking, and its thin, viscous legs adhered to the glass. Nose: The aroma was complex and elusive, much like trying to pinpoint the exact location of a fictional thief. However, consistent with many wheats, it was generally inviting and floral. Scents of candy sweetness, cherry Twizzler, maple syrup, candy corn, kiwi, and more unusual notes like damp campfire, pine sap, and steamed cauliflower were present. Taste: The palate offered a distinctly oily texture. Flavors of sour tree sap, tart Granny Smith apple, barrel char and tannins, and buttered bread emerged. It was pleasant but not overpowering. Finish: A smooth, lingering cinnamon finish was noticeable. Thoughts: I appreciate the growing category of wheat whiskey. I believe this particular offering is a valuable addition. It possesses the typical soft floral notes characteristic of wheat, but also a robust quality. I definitely suggest trying it if you have the chance! My thanks to Catskill Distilling. Cheers!

Recall the episode of Dr. Who where the last human kept asking for water. This whiskey is like that. Without any added water, it's one-dimensional and harsh. Adding water doesn't create complexity, but it does significantly reduce the harshness and bring out more barrel spices and flavors.
