This NOM 1607 Agave Spirit is complex, made from piñas slowly cooked in traditional brick ovens and crushed with a volcanic tahona stone. It's distilled in copper pots for warmth and column stills for balance, then bottled at 40%. The nose opens with agave, fruits, nuts, herbs, and spices. The palate is rich and complex with notes of caramel, grapefruit, melon, grass, lemon peel, and pear. The finish is herbal and medium in length, with hints of oak, pepper, almonds, clove, and coriander.
