Dolin Génépy le Chamois

Appearance: Pale golden yellow with a hint of green. Legs: Forms a solid coating in the glass. Tasting neat at room temperature. Aroma: Herbal and medicinal, less intense and sweet than Chartreuse. Mouthfeel: Rich and coating. Flavor: Soft, very sweet (white sugar) herbal spice, with notes of pine and white sage. Slightly bitter but not overwhelmingly so. Finish: Average, with a tingle of pine and herbal mint, and a hint of licorice. It's comparable to a simplified Yellow Chartreuse, lacking the ethanol intensity and strong herbal bite, but within the same flavor profile. It's delightful neat and would be even better chilled or with ice, as suggested on the bottle. I also anticipate it would pair well with gin or tonic. I'll revisit after trying it in mixed drinks. Chilling it with ice diminishes its character; refrigerating the bottle is preferable for a cold serving. I hesitated to purchase this, expecting a diluted version of Chartreuse, but it holds its own admirably. At 45% ABV, it has a decent kick. I'm still trying to clarify the distinction between this and Dolin Genepy des Alpes. Some sources suggest this is a new name for des Alpes, while the Dolin website lists both products with updated branding. Further investigation is needed.
