Geoff Dillon sourced ingredients locally for the inaugural whisky release from Dillon’s Small Batch Distillers. The rye mash bill is composed entirely of Ontario Rye Grain, consisting of 10% malted rye and 90% unmalted rye, all cultivated near the distillery. The spirit matured for 41 months in local Ontario oak barrels, resulting in a production of 1,107 bottles. While this initial batch sold out rapidly, a second batch is forthcoming.

Aroma of fruitwood and plums. It's complex, with flavor developing after a sip, revealing butterscotch and heat. Rye, or Canadian whisky to the untrained palate, is my preference, a taste I've had since high school.
Finally located a bottle of the initial batch (my favorite). A fantastic blend of spice and vanilla, with an oily, leathery texture. Numerous complex flavors are present, with sweetness emerging.
This is Batch 10. The aroma is vanilla, sweet, and like paper. The body has pepper and wood notes. The finish is citrusy at the end, resembling white zinfandel or champagne. It's intriguing, though not my preferred choice.
It's cask strength, but a bit of water reveals the vanilla and sweetness. Future batches will surely be great.
I don't understand how this has a 4.1 rating; it's undrinkable.
