About this bottle

DEVINE, a grain-to-glass distillery, sources its grains from British Columbia for its whiskies. The "alternative whisky" known as Ancient Grains incorporates spelt, emmer, khorasan, and einkorn alongside barley. It is aged in new American oak quarter casks and bottled at 90 proof. Note: This product is made in Canada but is not classified as Canadian whisky because it is aged for less than 3 years.

Ember Bryant 4.0

Abundant vanilla sweetness, accompanied by a peppery grain spice. Minimal barrel bitterness, despite the significant vanilla presence. Remarkably, despite its youth (aged 9 months in quarter casks, I was informed at the distillery), it lacks the sharp edge typical of other young spirits. Eager to sample it again.

Jazlyn Estrada 4.0

Grain aroma with a spicy character, difficult to identify. Sweetness reminiscent of vanilla and caramel, yet the spice is the primary taste. Primarily cinnamon, with notes of rye and oak. It has a medium body, and the rye spice lingers pleasantly at the end.

Surprisingly pleasant for a newly made spirit, though it's a bit vibrant and sharp. Subtle notes of grains and spice are present.

Candied fruit, nuts, spicy notes, with subtle smoke and oak undertones. Exceptionally smooth.
