An intense Agave Spirit from NOM-O134X, made with Espadin agave cooked in a traditional underground pit and double distilled. It ages for 3 months. It starts with an aromatic profile of agave, fruits, herbs, and spices; its rich and complex character adds notes of citrus and pine; leading to a long and smoky conclusion. April 2017

About this bottle
The brand's first offering is this ensamble mezcal, created from Espadín and Tobalá agave. Mezcalero Javier Mateo and his team produce it in Santiago Matatlán. The agave is roasted in pits, crushed using a tahona, and undergoes wild fermentation. It is then distilled in copper pot stills and aged in glass for 60 days prior to bottling.

Nose: Diesel, agave, and caraway/antiseptic. Palate: viscous and potent. The alcohol is pronounced, with smoky and herbaceous flavors including eucalyptus, a hint of peach, sweet fruit, and an open fire. Finish: savory and bone dry, long.
Nose: smoky, peppery, smells like a farm, maybe hay, definitely smells of agave. Mouth: the nose is echoed here, long smoky finish.
Part two of the tasting. Refreshing fruity aroma, with melon and pineapple. Good mouthfeel, with a custardy sweetness, peach, and smoke on the finish.
Amazing smoky gasoline mezcal, but not so overpowering that it can't be used to make a delicious mezcalrita!
I tried the Durango and Zacateca, and loved both. Central Valleys was quite harsh.
