Castle & Key Restoration Release Gin is crafted in the London Dry style, incorporating seven botanicals native to Kentucky alongside juniper. The foundational spirit is produced using yellow corn, rye, and malted barley, following one of the distillery's rye whiskey mash bill recipes. It is bottled at 106 proof. This limited edition is offered at the distillery and at select retailers in Kentucky and Tennessee.

Nose: Prominent juniper, lemon, and pepper. Underneath, hints of savory cassia, anise, and cardamom. Potent yet intricate. Taste: A thick, syrupy mouthfeel. Sweet anise, juniper, and lemon flavors are present, along with orange peel and white pepper. The alcohol level is noticeable and well-integrated. Overall, rich and powerful. Finish: Extended, dominated by juniper, pepper, orange peel, and lemon essence. Pleasantly potent while maintaining balance and appeal. Overall: An exceptional gin, and one I greatly admire. It perfectly embodies the London Dry style while remaining complex, engaging, and strong. High commendation to the makers. It's excellent neat, versatile in cocktails, and makes a superb martini. Using the tonic mix purchased at Castle & Key and the Castle & Key Gin to create this amazing Gin and tonic. Gin is aromatic and herbaceous, light and refreshing, requiring no lime in the Gin & Tonic.
