An intriguing aroma. Phenolic, waxy, white pepper, sweet almond, stone fruit, tart cherries, floral, and vanilla. The palate is similar, but also has an acidic sensation. Notes of mandarin and vanilla are present. The finish is distinctly grape-like. The initial taste is phenolic and like sweet orange peel, transitioning to pepper, more phenols, apricot, then mandarin overlaid with vanilla. The finish is slightly bitter and moderately long-lasting. Has a pleasant silky mouthfeel. A bit intense for 40% ABV, but in a good way. A pleasant lingering tingle from the alcohol. Quite enjoyable, and an interesting departure from my usual explorations of bourbon, Scotch, and rum.

About this bottle
Capel, a major spirits company and producer's cooperative in Chile, makes this clear, grape-based spirit. It is twice distilled from wine derived from Pedro Jiménez grapes cultivated in Chile's Elqui and Limarí regions.

Smells like freshly cut grass, raspberries, lime, and jasmine. It feels light and a bit harsh on the palate. The taste mirrors the aroma with grass, raspberry, and lime, while thyme appears on the brief finish. 2.25/5.00 – Just okay (neat)
Initial sharp acidity softens to reveal delicate hints of pear and subtle citrus
Sweet and smooth. But very sweet. Similar to ouzo, minus the anise flavor.
